Because She Won't Believe Me....
I am one of those people who won't thaw their frozen food on the counter.  Some people do (*cough* Amy *cough*) and are just fine with it.  In fact, some people (*cough* Amy *cough*) will poke fun at you and say things like, "I'll even make you dinner and I won't thaw the chicken on the counter."


*eyeroll*


I can't help it.  I prefer to thaw my food in the fridge.  But when the Big Guy forgets to bring up a pound of ground turkey from the freezer, and you plan to cook it in less than 24 hours....you sometimes have to take drastic steps.


It is true.
I set it on the counter to get a head start at defrosting.






I'm posting proof because Amy won't believe me if I told her otherwise.
So there.


Proof that I did indeed thaw my ground turkey on the counter 
(kinda....I put it in the fridge after about an hour or so).

Farm Friday:  Rainbow Cake, Part 2.
Over Easter, I made a rainbow cake for a family gathering.  You can read about it here and see photos.  


My dear, sweet, Godson, Spencer, was upset that he missed the rainbow cake.  With his 21st birthday just around the corner, I promised him that if he came out to visit us on the farm, I'd make him a rainbow cake.


But because we were only having a handful of people out to the house, making a 6 layer cake just didn't make sense.  So, instead, I made the box mix and portioned it out into 6 even servings.  I then colored them and layered them into a loaf pan.  The result?








I don't know about you, but I think it turned out pretty darn cool.

Will You be my Tour Guide?

Back in 2008, I wrote this blog post about going to the Olympics in 2012
And in a little more than a year, yours truly and the Big Guy will be headed to the UK.

Here is our plan:

Leave in mid-July to do the tourist stuff. 
Hit the Olympics on July 28th (day 1 of competition)
Leave the UK on July 30th to come back to the States.

I've been to London before and LOVED it.  I am excited to go back.

As we start to plan this trip--what should we see?
Any place that you've been that I must include?  I have my favorites, of course, but would love to hear yours.
Never been, but wanted to go?  What would you include?

Farm Friday:  Rhubarb (and a recipe!)
Like the asparagus patch that comes back year after year, there is also a rhubarb patch.
A really large rhubarb patch.


How large is large?
7 VERY LARGE plants.
How large is large?  Let's just say that the plants are up to my waist.  And I'm 5' 6".  So...

For this city girl...that's a lot of rhubarb.


So, I've been trying some different rhubarb recipes.  And I've found a winner. 
Sticking with a Minnesota company (is that the same as buying local?), I found this recipe on the Land O' Lakes website.  I have tweaked it ever so slightly.  If you find yourself with some rhubarb, go ahead and try this recipe for Blueberry Rhubarb bars!
