Farm Friday:  Rhubarb (and a recipe!)
Like the asparagus patch that comes back year after year, there is also a rhubarb patch.
A really large rhubarb patch.


How large is large?
7 VERY LARGE plants.
How large is large?  Let's just say that the plants are up to my waist.  And I'm 5' 6".  So...

For this city girl...that's a lot of rhubarb.


So, I've been trying some different rhubarb recipes.  And I've found a winner. 
Sticking with a Minnesota company (is that the same as buying local?), I found this recipe on the Land O' Lakes website.  I have tweaked it ever so slightly.  If you find yourself with some rhubarb, go ahead and try this recipe for Blueberry Rhubarb bars!

Make slush with your fruit, if you want more details, let me know.

5 cups of rhubarb juice (cooked fruit with water & strained)
1 can of cranberry/raspberry concentrate

pour into ice cube trays, freeze, add to sprite zero or any other soda (ice cube trays are the key to this version)

it's very low calorie and it's delicious in the summer! you can also make a alcoholic version too -- of course i have both in my freezer, the one with alcohol gets put in a big bucket and stays in the freezer, stir before serving and you are good to go

I'm not sure I've ever even SEEN what rhubarb looks like.. much less ATE it... that looks yummy though. If anything - I'd eat that crumply stuff on top! :) And are those almonds? Oh yeah - I'd try that!

I'm not a huge fan of rhubarb, but these look aaaamaaaaaazing.

Of course, most of my experience with rhubarb was picking it right off the plant and chowing down on it without even washing it. SO SOUR!
