Favorite Crockpot Chicken Recipe: Chili Orange Chicken
I thought I'd wrap up this week of crockpot recipes with one of my favorite chicken recipes. I actually got this out of Women's Day earlier this summer and each time I make it, I want to lick the extra sauce out of the crockpot.

That's normal, right?

Anyway, here's the link to the Women's Day article. I also copied their photo as well. I mean, why reinvent the wheel. You can also read how I make it by following the recipe below.

Chili Orange Chicken
3/4 cup enchilada sauce
1/4 cup BBQ sauce
1 T chili powder
1t cumin
8 boneless, skinless chicken thighs (or 4, bone in chicken breasts)
3 T orange marmalade
2 t grated orange zest

Place chicken in the crock pot.

In a small bowl, mix enchilada sauce, BBQ sauce, chili powder and cumin together. Pour over the chicken.

Cook on low for 5-7 hours or until chicken is cooked through.

Remove chicken. Whisk in the orange marmalade & orange zest. When well blended, spoon over chicken.

And if all the stars have aligned, the heavens parted and the angels have sung....your chicken will look like this.....complete with orange slice. (ha!)
